Black Bean Soup
This
spicy soup is perfect for a cold winter. Add a green salad and
some whole wheat bread for a delicious meal!
Ingredients:
2 teaspoons olive oil
2 onions, chopped
2 jalapeno peppers, seeded, deveined and chopped
1 garlic clove, minced
15 ounces canned black beans, drained and rinsed
2 cups chicken or vegetable broth
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon lime juice
˝ teaspoon salt
2 tablespoons chopped cilantro
1 small onion or 2 scallions, minced
- Heat oil in a nonstick sauce pan and sauté
the onions, jalapenos and garlic until soft.
- Stir in the beans, broth, cumin, coriander
and 1 cup water; bring to a boil.
- Reduce heat and simmer covered for 45 minutes.
Remove from heat and stir in lime juice and salt.
- Transfer soup to a food processor or blender;
puree. Pour back into
the saucepan and heat to serve.
Top with minced onion, cilantro, crushed tortilla chips,
sour cream or grated cheese.
Makes 4 servings; 1 serving: 207 calories;
4 g fat (1 g saturated fat); 0 mg cholesterol; 292 mg sodium;
31 g carbohydrate; 7 g fiber; 11g protein.
