About Beth
Based in Salt Lake City, Utah,
Beth serves the intermountain region working with professional athletes,
clinical patients and in academic situations. Beth is a
Registered/Certified dietitian with her Masters of Science degree in nutrition
from the University
of Utah. Beth also has her Bachelors of Science degree
in exercise science from Northeastern
University in Boston and is a Certified Strength and
Conditioning Specialist. She has worked in the wellness field for over 17
years in health and wellness facilities around the United States, as well as, England and Australia.
Currently, Beth is an adjunct faculty member at the University of Utah,
Division of Nutrition. She is a member the American Dietetic Association,
Nutrition Entrepreneurs Dietetic
Practice Group and IDEA, The International Association of Fitness Professionals.
Beth presents frequently to organizations, schools and health professionals
and is the sports nutritionist for the Utah Jazz. She has also written
articles for Handball Magazine, ACE Insider and is a contributing
author for the Safety Manual of the American Association of Cheerleaders
Coaches and Advisors. Beth is an ACE (American Council on
Exercise) certified group fitness instructor and has taught a wide variety
of fitness classes, including step, spinning and strength training for 20
years.
An athlete herself, Beth enjoys
being outside running, hiking, skiing and biking – all with her golden
retriever, Jackson. Beth has completed 12 marathons and successfully
climbed Mt. Kilimanjaro
in Africa. She also enjoys traveling,
gardening and eating chocolate!
